COLATURA DI ALICI ITALIAN FISH SAUCE

Colatura di Alici di Cetara is an anchovy sauce that is produced through a simple but tedious process. The anchovies are placed under salt in oak containers which are called "terzigni". In the "terzigni", the anchovies layered with salt. After layering, there is a wooden disc that exerts pressure which presses the salted anchovies and starts the process of carefully maturing. Colatura di Alici di Cetara is a full of Vitamin A and is great to use when cooking spaghetti.
